Ingredients
175 g | ground almonds |
125 g | caster sugar |
1 pinch(es) | salt |
1 tsp | almond extract |
1 large | egg, white only |
flaked almonds to decorate, optional | |
icing sugar, for decoration |
Instructions
Preheat oven to Gas Mark 3, 170°C, 325°F. Line a baking tray with rice paper or baking parchment.Place almonds, sugar and salt in a food processor and blend until very finely ground. Add almond extract.
Whisk egg white until foamy and add to food processor and pulse to a thick paste.
Moisten your hands and form into small balls, and place on baking sheet. Allow at least an inch, 2.5-3cm spacing around as they will flatten and expand outwards. Place one or two almond flakes on top.
Bake until light golden brown, about 17-20 minutes. Cool on wire rack and dust with icing sugar. Store in an airtight container.
Options:
Replace almond extract with ground cardamom for a different taste. Use an equal weight of whole shelled pistachios, or pistachio halves (not salted) to replace the almonds and flavour with cardamom – this is a more Middle-Eastern variant.
About the recipe:
The recipe is probably Moorish in origin but now an international favourite. Soft and deliciously chewy. They may have inspired the Italians to create Amaretti biscuits, similar but harder.
