Martha's pumpkin spice bread details
- Ingredients
- 3 eggs
- 2 cups canned pumpkin
- 3/4 cup vegetable oil
- 1/2 cup water
- 2-1/2 cups all-purpose flour
- 2-1/4 cups sugar
- 1-1/2 teaspoons baking soda
- 1-1/4 teaspoons salt
- 3/4 teaspoon nutmeg
- 3/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1 cup yellow raisins
- 1 cup coarse walnuts
Combine eggs, pumpkin, vegetable oil, and water. Beat together and add flour. Add remaining ingredients except raisins and walnuts; stir to combine. Fold in raisins and walnuts. Grease and flour three 1-pound cans (coffee cans). Pour batter into cans and place in oven standing up. Bake at 350 degrees for 1 hour and 15 minutes. Remove from cans almost immediately. Turn out onto foil and let cool. Slice with electric knife. Garnish with whipped cream and nuts.
