The Marlborough apple pie recipe is a classic dessert that originated in the Marlborough region of New Zealand. Ingredients

For the Filling:
puff pastry, crust pastry to fill an 8-inch pie dish.
1 medium lemon, zest and juice
2 large apples
225 g sugar
3 medium eggs
120 g unsalted butter

Instructions

Place the lemon juice and zest into a large bowl. Grate the apples into the lemon juice to prevent browning. Toss the grated apple to cover with the juice. Pour the sugar over the apples and mix well. Set aside.

Preheat oven to Gas Mark 6, 200°C, 400°F.

Grease an 8-inch, 20cm pie dish and roll out the pastry on a lightly floured surface to fit the pan and to line the base and sides. Trim the pastry to just above the rim of the tin.

Beat the eggs in a bowl until light. Cream the butter in another bowl until soft and add the eggs. Blend well. Stir the mixture into the apples until well mixed and spoon into the pastry base.

Bake for 15 minutes. Reduce heat to Gas Mark 4, 180C, 350F and bake for another 45 minutes until browned on top and the pastry is risen and golden.

Cool before serving. serve warm or at room temperature.
