Marinated jalapeno chiles recipe details
I was given this great recipe by my father-in-law. It makes the best tasting jalapenos I have ever tasted, pickled peppers that will make your mouth water without needing water.

Ingredients
Serves: 25- 1 tablespoon vegetable oil
- 2 pounds fresh jalapeño chiles
- 1 large onion, thinly sliced
- 1 head garlic, cut in half vertically and cloves peeled
- 2 large carrots, peeled and sliced thin
- 3 cups white vinegar
- 1 cup water
- 3 tablespoons dried oregano, crumbled
- 1/4 cup firmly packed brown sugar
- Salt and freshly ground pepper
Preparation method
Prep: 1 hour 20 mins | Cook: 10 mins1. In a large saucepan over medium heat, warm the oil. Add the chiles, onions, garlic, and carrot. Sauté until just tender-crisp, about 1 minute. Add vinegar, water, oregano, brown sugar and salt and pepper to taste, bring to a boil. Remove from heat, cover and let cool completely before serving.
2. To store, pour into glass jars and cover tightly. Can be kept in refrigerator for up to three months
