Ingredients
Serves: 14- 3 cups water
- 1 1/2 cups vinegar
- 2 cups red wine
- 1/2 cup olive oil
- 3 bay leaves
- 1/2 teaspoon sage
- 1/4 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1/2 teaspoon red pepper
- 1 teaspoon dill seed
- 1 teaspoon paprika
- 1 teaspoon garlic salt
- 1 cup finely chopped onions
- 1 cup finely chopped celery
- 1/4 cup butter
- 2 tablespoons salt
- 1 tablespoon pepper
- 1 (10 pound) bear roast
- 8 cloves
Preparation method
Prep: 20 mins | Cook: 5 hours 30 mins | Extra time: 8 hours, marinating1. In a large soup pot, combine all ingredients except cloves and roast. Bring to a boil, then simmer on low for 30 minutes. Before the marinade cools, add the meat. Allow to marinate overnight.
2. Preheat oven to 325 degrees F.
3. Place the meat and the marinade in a big roasting pan and bake 30 minutes per pound (300 minutes, or 5 hours). Bear has the consistency of pork and should be served well-done.
4. About three minutes before the roast is done, pour off the marinade and use it for gravy. Rub a little butter over the roast and stick in the cloves.
