Ingredients

400 g navy beans, soaked overnight
1 medium onion, diced
200 ml maple yrup
1 tsp dry mustard
salt and pepper, to taste

Instructions

Place soaked and drained beans in a pot with enough cool water to cover. Cook over low heat until beans are tender enough to mash easily.

Preheat the oven to 150°C. Drain beans and place them in an ovenproof casserole.

Sauté onions until soft and slightly brown. Add to the beans.

Pour over the maple syrup and add mustard. Stir to blend thoroughly. Season with salt and pepper.

Cover the casserole with foil and bake for 2-3 hours.
