Maple chick pea salad recipe details
This is an improvised salad that came from various sources but added my own touch to it. It’s warm and makes a very light and savory appetizer.

Ingredients
Serves: 4- 1 onion, red or white, chopped
- 1 cup chick peas, rinsed
- 1 minced clove garlic
- 1 tablespoon real maple syrup
- 1 teaspoon mustard powder
- 3 cups baby spinach
- 1/2 red pepper, diced
- 1/2 green pepper, diced
- Dressing:
- 1 tablespoon real maple syrup
- 1 tablespoon balsamic vinegar
- 1/4 orange, pressed
- salt and pepper to taste
Preparation method
Prep: 20 mins | Cook: 10 mins1. In a pan, on medium heat, cook the onions until lightly soft.
2. Add the chick peas and cook for about 5 minutes while stirring. Add 1 tablespoon of maple syrup (do not use any generic, use the real thing) and mustard. Cook for a few extra minutes while stirring to caramelize the onions and peas.
3. In a bowl containing the spinach and peppers, introduce the mix of peas and onion. Softly mash the peas in the salad and stir the ingredients.
4. in a separate cup, make the dressing with the rest of the maple syrup, vinegar and orange juice. This dressing is an extra for people in search of an additional kick and is to be added to taste.
