Manly breakfast gravy recipe details
Here is a gravy that is hearty and filling, goes a long way and is very nearly a meal in itself. Definitely NOT Lo-Cal!

Ingredients
Serves: 8- 1/2 pound bulk breakfast sausage, or
- 1/2 pound thick-sliced bacon, the less fat the better
- 1 to 2 cups flour
- 1/4 cup butter or margarine (optional)
- 2 to 4 cups milk (as required and depending on how much gravy you want to have
- 1 to 2 tablespoons salt (to taste)
- 1 tablespoon coarse ground peper
- Pinch onion salt (to taste)
- Pinch garlic salt (to taste)
- 1 tablespoon ground chili pepper flakes (optional)
Preparation method
Prep: 10 mins | Cook: 30 mins1. Over a medium heat and in large skillet (cast iron best but not mandatory), melt butter or margarine. Cook sausage or bacon, sausage until done or bacon until crisp. When cooked, leave in pan; if using bacon, break up into smaller pieces.
2. Start to add flour evenly into the mix, constantly stirring and adding milk a little at a time until mix is smooth (discounting lumps of meat). Continue to add flour and milk and stirring continually, scraping bottom of pan to loosen small bits.
3. Add remaining ingredients as mixture thickens. The longer you cook the gravy the more it will thicken. If too thin for your preference, add one tablespoon of flour until reaching desired consistency.
4. When gravy is thickened to desired consistency, turn off heat. Gravy will continue to thicken somewhat as it cools. If too thick, add small amounts of milk to thin to desired consistency.
5. This gravy is great for those cold mornings or whenever you want a hearty breakfast before heading out of the house to work or play. Cook your eggs to desired, place eggs on plate and spoon as much gravy as you like over them. As a bit of a change, I will, sometimes, take a couple pieces of toast and place them on my plate (without butter – no need to overdo the calories), place your eggs on top and top all with gravy.
6. NOTE: if your tummy is sensitive, you can cut back or eliminate the butter/margarine in cooking the sausage/bacon, but don’t remove the meat or drippings before combining the balance of the ingredients as they add to the flavor.
7. If you like your gravy spicy you might like to add a few drops of your favorite hot sauce (Tabasco?) before serving.
8. If not serving a bunch of buddies for that before-hunt/play breakfast, store the leftovers in a covered container. This gravy will keep for 3-4 days easy in the refrigerator. For following servings, warm up gravy in a covered microwave-safe container. I use a moistened paper towel over a glass microwave-safe bowl to re-heat for one minute, stir and heat additional 30 seconds. Use caution when taking container out of microwave. The gravy tends to heat up around perimeter and the bowl will be warm to hot, depending on microwave power.Alternate method
This gravy can be made for other meals like Thanksgiving by substituting bits of turkey. The key is to continually stir to prevent lumps. You can also add some chicken stock in addition to the milk to enhance the flavor.
Alternate methodIf you have no bacon or sausage on hand you can substitute lean hamburger. The gravy isn’t quite as flavorful but is still satisfying.
Alternate methodOther ingredients can be added to the mix if you want more variety. I have added 1/4 cup small-diced onion bits (you can substitute commercial dried onion bits). Like it spicy? Add diced pieces of jalapenos or hot (warm?) green chilis. Let your imagination work and modify to your desires.
