Mango upside down cake recipe details
Ingredients
300 g | mangoes, sliced |
2 tbsp | lemon juice |
For the Batter: | |
1 tbsp | butter |
60 g | brown sugar |
40 g | shortening |
¼ tsp | salt |
100 g | white sugar |
1 medium | egg, beaten |
120 ml | whipping cream, whipped |
120 ml | milk |
120 g | flour |
2 tsp | baking powder |
Instructions
Pour lemon juice over mango slices and allow to stand for 15 minutes.Melt butter in a oven-proof pan or casserole dish, add brown sugar and cover with a layer of mango slices.
Batter:Combine the shortening, white sugar, whipped cream and then add beaten egg. Sift dry ingredients and add alternately with milk. Mix well.
Preheat oven to 180°C.
Pour batter over mangoes and bake 50-60 minutes. Remove from oven, turn it out upside-down and serve while still warm.
