Mango mousse details
INGREDIENTS:Makes 8-10
Mango puree:
2 fresh mangoes, cubed
50ml ice water
50-60g castor sugar (sweetness depends on type of mangoes)
1 tbsp gelatine
60ml water
240ml natural yogurt
240ml whipping/ double cream
Extra mango slices/cubes for decoration
Method:
- In a stainless steel mixing bowl, dissolve gelatine in 60ml water. Heat the mixture over a pot of simmering hot water, until gelatin is totally dissolved. Set aside.
- Combine mangoes cubes, water and castor sugar in a food processor. Puree thoroughly. Add gelatine mixture in (1) and yogurt and process to mix well. Transfer to a mixing bowl.
- In another mixing bowl, whip cream until stiff peaks form. Fold it into the mango mixture,
- Divide mousse in individual dessert cups, OR pour mousse onto a round sponge cake base surrounded by Rodöide plastic. Let the mousse set in refrigerator for at least 4 hours or overnight.
- Decorate mousse with mango slices/cubes, chocolate decorations, whipped cream or fruits.
