Mango ginger sorbet recipe, recipe Rating: 4.6

Ingredients

375 ml water
55 g sugar
2 small mangoes, 600g
2 tbsp lemon juice
2 tsp glace ginger, chopped
2  egg whites


Instructions

Combine the water and sugar in a saucepan, stir over heat, without boiling, until the sugar is dissolved. Boil, uncovered, without stirring, for about 5 minutes or until thickened slightly. Cool. Refrigerate syrup until cold.

Process mango flesh, juice, ginger and syrup until smooth. Pour mixture into a freezer proof dish and freeze until almost set.

Beat sorbet with egg whites in large bowl with an electric mixer until smooth. Pour back into the dish, cover and freeze until firm.

If you have an ice-cream maker then fold the beaten egg whites into the mango mixture and churn until set.
