Mango and coconut cream recipe details
Ingredients
2 | ripe mangos |
250 ml | coconut milk |
50 g | sugar |
100 ml | white wine |
1 | lime, grated peel |
2 pinch(es) | freshly grated ginger |
350 ml | whipping cream |
1 pinch(es) | salt |
To garnish: | |

mint | |
physalis |
Instructions
Peel the mangos, cut the flesh from the stones and dice roughly.In a saucepan, caramelize the sugar. Add the mango pulp and deglaze with the wine. When the wine has evaporated, add ginger, lime peel, coconut milk and a pinch of salt. Boil down a bit. Purée and allow to cool until the mixture is completely cold.
Whip the cream until almost stiff and fold in the cold mango cream.
To serve:
Fill the cream into dessert glasses and sprinkle with coconut flakes. Decorate with mint and physalis.
