Mandarin orange muffins details
- Dry Ingredients:
- 5 cups unbleached flour
- 2/3 cup sugar
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- Wet ingredients:
- 2 cans (12 ounces) canned mandarin oranges, pinched (including juice)
- 2 eggs
- 2 egg whites
- 2 Tablespoons canola oil
- 1 teaspoon orange zest
- 1/2 teaspoon orange extract
Mix together dry ingredients so all are blended thoroughly. In a measuring pitcher combine all wet ingredients. Be sure to pinch the pieces of orange apart, so there are no large clumps. Pour wet ingredients into dry, mix just until moist.>DO NOT OVER MIX!!!
Spray muffin tins with non-stick cooking spray. Then, spoon batter into muffin tins and top off by sprinkling each with about 1/4 teaspoon of sugar. Bake at 325 degrees F for about 20 minutes or until golden brown.
