Ingredients
Serves: 6- 2 tablespoons olive oil
- 3 large onions, sliced
- 1 tablespoon brown sugar
- 1 tablespoon cider vinegar
- 2 pounds ground beef or pork/beef mixture
- 1 egg
- 3/4 cup + 2 tablespoons BBQ sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 3/4 cup bread crumbs
Preparation method
Prep: 10 mins | Cook: 2 hours 10 mins1. Preheat oven to 350 degrees F and line a big loaf pan with parchment paper.
2. In a large skillet over medium-high heat, heat the oil until it’s almost smoking. Dump in the onions and cook to caramelize, stirring only occasionally, about 15 to 20 minutes. Stir in the sugar and vinegar when onions are browned and let everything cook for another 5 minutes.
3. Chop 1/2 cup of the cooked onions, and reserve the rest. Place chopped onions in a large mixing bowl and combine with the ground beef, egg, mustard, Worcestershire, salt, breadcrumbs, and 3/4 cup BBQ sauce.
4. Place in prepared loaf pan, cover with foil, and bake for 90 minutes. Then, remove foil and spread the 2 tablespoons BBQ sauce and the onions on top of the meatloaf; bake for 20 more minutes.
