Ingredients
175 g | unsalted butter at room temperature |
175 g | caster sugar |
3 medium | eggs, free-range if possible |
250 g | self-raising flour |
2 tbsp | milk |
1 | lemon, zest only |
3 strip(s) | candied lemon peel, to decorate |
Instructions
About the recipe:It may have once been served with a glass of fortified, Madeira wine and gained the name by association.Preheat oven to Gas Mark 4, 180°C, 350°F.
Grease and line a 7 inch, 17-18cm cake tin. Lightly grease lining paper or use silicone paper.
Cream butter and sugar together until light and fluffy. Add eggs, one at a time followed by a little flour to prevent curdling. Sift in remaining flour and beat together, adding enough milk to create a slow dropping consistency. Beat in lemon zest.
Spoon into prepared tin and level top. Bake for at least 30 minutes, or until golden brown on top and a skewer inserted into the centre comes out clean. Remove from oven and cool in tin for about 10 minutes. Remove cake from tin and cool completely on a wire tray. Remove lining paper when cold.
Decorate the centre with strips of candied peel. Cut to serve with tea, coffee or a glass of wine.
For a larger cake to serve at least 16, double all quantities and use a 9-10 inch, 22-25cm spring-back cake tin. The baking time may be slightly longer than normal with a 9 inch, 22cm tin due to a slightly greater depth of batter. A 10 inch, 25cm tin may require slightly less than normal.
