Madeira cake details
INGREDIENTS:175g butter/margarine
175g caster sugar
3 large eggs
250g all-purpose flour, sifted
2 tsp baking powder, sifted with all-purpose flour
Grated rind and juice of 1/2 lemon
METHOD:
- Preheat oven at 180 deg C. Prepare a greased 8 inch cake tin.
- Cream together the butter/margarine and sugar until light and fluffy.
- Add the eggs one at a time, beating well between each addition.
- Fold in the flour, baking powder, lemon rind and juice into the cake batter.
- Bake in the preheated oven for 50-55 minutes until golden brown and springy to touch.
- Leave to cool in the tin for about 5 minutes before turning the cake onto a wire rack to finish cooling.
- Dust cake with some icing sugar. Decorate cake with lemon slices if you like.
