Maccheroni and olive summer salad recipe details
Ingredients
150 g | fresh olives |
180 ml | water |
250 ml | chicken stock |
½ tsp | oregano |
¼ tsp | garlic powder |
100 ml | lemon juice |
2 tbsp | vinegar |
60 g | Cheddar cheese, grated |
100 g | maccheroni, cooked |
1 | cucumber, diced |
1 medium | red onion, chopped |
For the Dressing: | |
240 ml | sour cream |
2 tbsp | mayonnaise |
2 tbsp | green chili, chopped |
Instructions
Combine water, stock, oregano and garlic water and bring to a boil. Add lemon juice and stir. Add vinegar. Remove from heat and cool until slightly thickened.Grease a large bowl. Cut olives into slices. Combine oives, cheese, macaroni and cucumber into thickened liquid. Pour everything into the greased bowl and chill.
Mix together the ingredients for the dressing and serve with the salad.
