Ingredients
250 g | soft butter |
250 g | sugar |
4 | eggs, separated |
1 | lime, grated peel |
125 g | semolina |
2 tsp | baking powder |
1 pack(s) | custard powder |
750 g | curd cheese |
salt | |
raisins, optional |
Instructions
Line the bottom of a springform tin with baking paper. Butter the edges and dust with flour.Whisk the egg whites until stiff. Set aside.
Whisk the butter with sugar and a pinch of salt until creamy. With a hand mixer whisk in the egg yolks, one after the other. Add in the lime peel, semolina, baking powder, custard powder and curd cheese, whisking constantly until creamy and well combined. Optional add the raisins. Fold in the beaten egg white. Evenly fill the batter into the springform tin.
Bake the cake in the preheated oven at 170°C for 60 minutes until golden.
