Lower fat broccoli salad recipe details
This is a twist on the classic creamy broccoli salad to lower the fat content.

Ingredients
Serves: 8- 5 slices extra-lean turkey bacon, chopped
- 1 cup light (or fat-free) mayonnaise
- 3 tablespoons white-wine vinegar
- 2 tablespoons white sugar
- 2 medium heads fresh broccoli, cut into bite-sized pieces
- 1 large green onion, chopped
- 1 cup red seedless grapes, halved
- 1 cup golden raisins
Preparation method
Prep: 10 mins | Cook: 5 mins | Extra time: 2 hours, chilling1. Cook bacon in microwave oven on high on a plate between 2 pieces of paper-towel for about 3 minutes, until slightly crispy. Chop or crumble.
2. In a small bowl, combine mayonnaise, vinegar, and sugar. Mix until slightly frothy.
3. In a large bowl, combine broccoli, onion, grapes, raisins, and bacon. Toss ingredients until well distributed.
4. Pour mayonnaise mixture over contents of the large bowl, and toss again until well mixed.
5. Refrigerate for 2 or more hours before serving to let the vinegar/sugar/mayonnaise mixture take the flavor it should have.
