Ingredients
Serves: 4- Turkey curry:
- 1 pound ground turkey
- 1 cup chopped unpeeled apple
- 1 cup chopped onion
- 3 stalks of celery, chopped
- 1 red pepper, chopped
- 1 1/2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 2 tablespoon curry powder
- 2 cups skim milk
- Raisin rice:
- 1 cup raw brown rice
- 1/2 cup raisins
- 2 1/2 cups non fat chicken broth
Preparation method
Prep: 30 mins | Cook: 30 mins1. Cook the turkey over medium-high heat until browned evenly, stirring frequently. Drain the turkey on paper towels and set aside.
2. Spray a wide nonstick skillet with vegetable oil spray. Over medium heat, saute the apple, onion, celery and red pepper stirring frequently, until the onion is translucent, and set aside.
3. In a large sauce pan, heat the olive oil over low heat just until it is warm. Stir in the flour and curry powder. Heat and stir over medium-low! Continue to heat until the flour begins to bubble. Gradually add the skim milk to the curry mixture, continuing to whisk over medium-low heat until the mixture thickens. When the mixture is thick, pour over the turkey and the apple-onion mixture. Stir well and heat through.
4. Raisin Rice: In a large nonstick skillet, toast brown rice over medium heat, stirring frequently, until most of the rice is toasted. Add raisins and chicken broth and bring the mixture to a boil, reduce the heat to low and cover, and cook for 25 minutes or until the liquid is absorbed.Cook Information Cleanup:
