Low fat cream of cauliflower soup recipe details
I created this recipe today, combining aspects from similar recipes I had seen on Allrecipes and elsewhere … and accommodating the contents of my larder. If you like cauliflower, this is a great fall/winter warm-you-up. Portions are an estimate, but it made a small vat of really aromatic soup. Enjoy!

Ingredients
Serves: 10- 1 large onion
- 6 or 8 cloves garlic
- 1/4 cup neutral oil (I used peanut)
- 1 (49.5 ounce) can low-fat chicken broth
- 2 medium (or one large) head cauliflower, broken into small florets
- 3 (14 ounce) cans non-fat evaporated milk
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground nutmeg
Preparation method
Prep: 10 mins | Cook: 1 hour 15 mins1. Chop mince onion and garlic.
2. Saute onion and garlic in oil, till soft, but not brown, about 15 minutes on medium heat, stirring frequently. Add broth and cauliflower.
3. Simmer till very tender, about 30 minutes, on medium heat, breaking up florets with spoon as they soften. Keep in mind that this will determine the eventual texture of the soup.
4. When cauliflower is well cooked, add milk and spices. Simmer on low-medium heat for 30 minutes.
