Loganberry lemon bars recipe details
Ingredients
Pastry Crust Base: | |
100 g | flour |
115 g | butter, melted |
30 g | powdered sugar |
Filling: | |
2 medium | eggs |
3 tbsp | fresh lemon juice |
2 tbsp | flour |
150 g | loganberries |
1 tsp | grated lemon zest |
200 g | granulated sugar |
¼ tsp | baking powder |
powdered sugar, for garnish |
Instructions
Preheat oven to 150°C.Crust:>/b>
Sift together flour and sugar in a large bowl. Add the melted butter and mix to a loose dough. Pat the mixture into a non-stick baking pan. Bake until just browned around the edges, about 10 minutes.
Filling:
In a mixing bowl, combine eggs, lemon peel, lemon juice and sugar. Beat at low speed until mixture is smooth, about 5 minutes.
Combine flour and baking powder in another bowl. Mix until well-blended, about 3 minutes. Combine both mixes and fold in whole loganberries with a spoon. Pour the filling into the baked pastry crust base. Bake for about 20 minutes or until the mixture is set.
Remove from the oven and let the pan cool. Sift powdered sugar over the top. To serve cut the pastry into bars.
Serving suggestions:Serve with whipped cream or vanilla ice cream.
