Lobak details
INGREDIENTS:Makes approx. 25 rolls
640g lean pork, cut into strips
10 water chestnuts, diced
1 onion, diced
2-3 tbsp chopped spring onions
2 eggs
1 large piece of beancurd sheet, cut into 15 x 12 cm pieces
Seasoning:
Dash of pepper
2 tsp five-spice powder
2 tsp sugar
3 tbsp light soy sauce
1 tsp oyster sauce
Few drops of sesame oil
4 tbsp cornstarch
Method:
- Combine meat, waterchestnuts, onions, spring onions, eggs and seasoning in a bowl. Mix well and marinade for overnight .
- Lightly wipe beancurd sheets with a damped kitchen cloth and place 3 tbsp of marinated mixture on to each beancurd sheet. Roll up tightly and secure both ends with toothpicks .
- Steam rolls for 10-15 minutes until cooked. Remove from steamer, cool completely.
- Deep fry in hot oil until golden brown and crispy.
- Remove toothpicks and chop each roll into 4-5 pieces. Serve with chili sauce or special lobak dipping sauce.
Notes:
- The purpose of wiping the beancurd sheets is to soften it for easy wrapping and rolling. The second reason of doing so is to cut down the saltiness by wiping off some salt on the surface of the beancurd sheets.
