Ingredients
1 ½ kg | beef chuck, boneless |
500 g | carrots, cleaned and cut into 1 inch pieces |
4 large | potatoes, peeled and quartered |
1 large can(s) | stewed tomatoes, about 500 g |
2 medium | onions, coarsely chopped |
2 stalks | celery, diced |
2 clove(s) | garlic, crushed |
400 ml | dry red wine |
½ tsp | sugar |
salt & pepper to taste | |
1 tbsp | mustard, if desired |
oil, for browning |
Instructions
Salt and pepper meat generously, brown all sides well in large, heavy skillet.Set meat aside, briefly sauté onions and garlic in the skillet; add potatoes, carrots, tomatoes, celery, sugar and wine.
Place meat on top of vegetables; if necessary, add water (or more wine) to cover vegetables and part of meat.
Cover skillet and place in 300 degrees F (150 Celsius) oven, braise for 1˝ – 2 hours.
Remove meat, potatoes and approximately half of the carrots and set aside.
With electric hand chopper puree remaining carrots, onions and celery in skillet.
Salt and pepper the thickened sauce to taste, add mustard.
Slice meat into portions and serve with the potatoes, carrots and sauce
