Fresh spicy dip for tortilla chips. Beware–use just one canned chipotle, not one whole can of chipotle. Don’t make the mistake of overspicing (yes this is possible).

Ingredients
Makes: 2 cups- 1/4 cup chopped fresh cilantro
- 1 clove garlic
- 1 canned chipotle chile in adobo sauce
- 1 (14 ounce) can artichoke hearts, drained
- 1/2 cup grated Pepper Jack cheese
- 1/4 cup olive oil
- 2 tablespoons lime juice
Preparation method
Prep: 5 mins1. Combine cilantro, garlic, and pepper in a food processor and pulse for about 20 seconds, making sure ingredients are chopped finely. Then add remaining ingredients and pulse for another 5 to 10 seconds to combine.
2. Serve with tortilla chips or small warmed tortillas.
