Chipotle Black Bean Soup

This is a easy black bean soup with the smoky flavor and kick of chipotle peppers. Resist the urge to add any salt as the bacon and canned beans already bring enough salt to the soup the balance the dish perfectly. I used bacon ends for this recipe because they are cheap. If you can’t find them, choice bacon is fine to use. Serve hot with a dollop of sour cream and Tostones (Fried Plantains).

Ingredients
Serves: 4
- 1/2 pound bacon ends, diced
- 1 cup coarsely diced onion
- 6 cloves garlic, diced
- 2 chipotle peppers in adobo, diced with sauce reserved
- 56 ounces canned black beans, juice reserved
- 14 ounces low sodium chicken broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons coarsely ground pepper
- 1 teaspoon smoked paprika
- 1/2 cup packed fresh cilantro, coarsely chopped
Preparation method
Prep: 15 mins | Cook: 1 hour
1. Heat skillet over medium high heat and saute the bacon, onion and garlic only soft, about 5-7 minutes. Remove from heat and drain well.
2. In a 5 quart stock pot, add chipotle peppers with reserved sauce, black beans with reserved juice, chicken broth, Worcestershire, ground pepper, smoked paprika, cilantro and sauteed bacon mixture. Simmer over medium low heat for 45-50 minutes.
