Ingredients
Serves: 4- 1 pound baby red potatoes, quartered
- 1 teaspoon grated lemon zest
- 3 tablespoons lemon juice
- 1 shallot, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup canola oil
- 2 cups sugar snap peas
- 1 (6 ounce) can salmon, drained and flaked
- 2 tablespoons chopped chives
Preparation method
Prep: 15 mins | Cook: 15 mins1. Bring a large pot of salted water to boil over high heat. Add potatoes and cook for about 15 minutes, or until potatoes are fork-tender. Drain.
2. Combine lemon zest, lemon juice, shallot, salt, pepper, and canola oil in a large bowl. Add potatoes and toss to coat.
3. While the potato mixture cools, bring 1 inch of water to boil in a steamer. Place peas in the steamer basket and cover; cook for about 2 minutes, then rinse with cold water.
4. Stir peas, salmon, and chives into the potato salad. Serve.
