Ingredients

For the topping:
1.2 kg apples, e.g. Bramley
1  lemon, juice
1 packet(s) custard powder, vanilla flavoured, to cook
150 ml apple juice
250 ml dry white wine
25 g sugar
For the crumbles:
80 g light butter
½  lemon, grated rind
80 g sugar
1 pinch(es) salt
1  egg
200 g flour
70 g corn starch
1 tsp baking powder
To sprinkle:
coarse sugar

Instructions

For the topping:
Peel, halve and core, then roughly grate the apples. Sprinkle the grated apples with lemon juice then drain in a sieve.

Mix the custard powder with 6 tablespoons of apple juice. Pour the remaining apple juice and the white wine in a saucepan, add the sugar and bring the mixture to the boil. Remove from the heat and stir in the custard powder mixture. Place on the heat again and bring to the boil again. Remove from the heat again and stir in the grated apples. Set aside.

For the crumbles:
Stir the butter until soft and creamy. Stir in the lemon rind, the sugar and the salt. Fold in the egg. Combine the flour and the corn starch and stir in. Knead with your fingertips until crumbly.

Preheat the oven to 180°C.

Evenly divide the crumbles on a greased baking tray (30*40 cm) and press firmly onto the bottom. Divide the apple pudding mixture on top.

Bake in the preheated oven for approximately 30 minutes.

Transfer the baking tray on a wire rack and allow the cake to cool. Sprinkle with coarse sugar, cut into slices and serve.
