Ingredients

½ head(s)	red leaf lettuce
1	ripe avocado
	lemon juice
1	onion
3	tomatoes
1 large can(s)	kidney beans, drained, 250g
	parsley, chopped
4 tbsp	olive oil
3 tbsp	balsamic vinegar
	sugar
	salt and pepper
	chili powder

Instructions

Wash, then spin dry the lettuce. Halve and peel the avocado and remove the stone. Cut the flesh into longish slices and sprinkle with lemon juice. Cut the onion into rings. Slice the tomato. In a shallow bowl arrange the lettuce, the beans and all the other ingredients.

Mix the vinegar with salt, pepper, sugar and chili powder and whisk in the oil. Drizzle the dressing over the salad and toss gently.
