|4||avocados, stoned, peeled, cubed|
|1 tbsp||lemon juice|
|4 medium||eggs, hard-boiled|
|1 bulb(s)||spring onions, chopped|
|salt and pepper, to taste|
|fresh parsley, chopped|
Combine parsley and spring onions in a blender and process until smooth. Add the avocado and the lemon juice and process again. Add the eggs and season to taste with salt and pepper. Pulse until well combined.
Turn into a bowl and add enough of the mayonnaise to bind the mixture into a paté.
