Ingredients
1 | onion |
2 tbsp | butter |
2 clove(s) | garlic, minced |
1 tbsp | curry powder |
½ tbsp | mild paprika powder |
¼ tsp | ground cumin |
salt and pepper | |
4 tbsp | tomato puree |
1 l | vegetable stock |
300 g | yellow lentils |
1 bunch(es) | parsley, finely chopped |
Instructions
Dice the onion and sauté in melted butter. Add the garlic, curry powder, paprika, cumin, salt and pepper. Stir in the tomato purée and cook shortly.
Deglaze with the vegetable stock and add the lentils. Bring to a boil and simmer over low heat for 35 minutes or until the lentils are done.
Serve the soup sprinkled with parsley.
