Lentil soup recipe details
Ingredients
600 g | dried lentils |
3 liter(s) | water |
1 | ham bone with meat |
3 medium | onions, chopped |
400 g | celery with leaves, thinly sliced |
200 g | carrots, peeled and sliced |
3 tbsp | parsley, chopped |
salt and pepper, to taste | |
croutons or sliced Frankfurters |
Instructions
In a large kettle soak the lentils covered with cold water for at least 3 hours. Then drain well and return the lentils to the kettle with 3 litres fresh water and add the ham bone. Bring to a boil and simmer for 3 hours.Then add the vegetables and simmer for another hour.
Process three-fourths of the soup in a food processor, then return it to the remaining one-forth of the soup in the kettle. Season with salt and pepper. Remove the ham meat from the bone, cut it in bite size pieces and add it to the soup.
Reheat the soup and serve with croûtons or sliced Frankfurters.
Variation:
For a ‘Split Pea Soup’ substitute split peas for lentils. Soaking is not necessary.
