Lemon roll recipe details
Ingredients
80 g | flour |
1 tsp | baking powder |
1 medium | egg, beaten |
180 g | caster sugar |
1 tbsp | olive oil |
1 tsp | lemon extract |
6 medium | eggs, whites only |
50 g | confectioners’ sugar |
80 ml | lemon curd |
300 ml | whipping cream |
2 tsp | grated lemon rind |
Instructions
Preheat oven to 190°C.Mix the flour, baking powder and salt.
Beat the egg until thick and slowly beat in 50g of the caster sugar until creamy. Add the oil and lemon extract.
In another bowl, beat the egg whites until they form soft peaks. Add remaining caster sugar and beat until the mixture holds stiff peaks. Add the egg whites and then the flour.
Spoon into a greased 30 x 20 cm roll tin and bake for 10 minutes.
Cover a clean tea towel with a sheet of greaseproof paper and dust with the icing sugar. Invert the cake on to the towel.
Trim the edges and run a knife about 2.5 cm from the short edge, cutting half-way through the cake. Roll up the cake from the cut edge. Leave to cool.
Unroll the cake and spread with lemon curd.
Whisk the cream until stiff, and stir in the lemon rind. Spread over the lemon curd, then roll up the cake again.
Chill for 1 hour before serving.
