2 cups all-purpose flour
1 cup sugar
3 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 cup half & half cream
1/2 cup oil
1 teaspoon lemon extract
1 cup raspberries


Combine flour, sugar, baking powder, and salt. In a separate bowl, combine eggs, cream, oil, and lemon extract. Stir wet ingredients into dry ingredients until moist. Fold in berries. Fill greased jumbo muffins cups 2/3 full. Bake at 400 degrees for 25 minutes. When cool, remove to rack.

Yield: 8 jumbo muffins
