Lemon pudding recipe details
Ingredients
300 g | bread crumbs |
60 g | flour |
90 g | sugar, castor |
60 g | rice flour |
½ tbsp | baking powder |
1 medium | egg, beaten |
1 pinch(es) | salt |
some | milk |
juice of 1 lemon | |
rind of lemon, grated |
Instructions
Grate the rind off the lemon and place it on to the top of the sugar. Mix the sugar with the rind until roughly blended.In a bowl mix flours, breadcrumbs, baking powder and salt. Make a well in the centre. Add the lemon juice and egg, and enough milk to make a smooth and soft consistency.
Pour the mixture into a greased mould, cover with a lid or with greased paper, and steam for 2 to 3 hours.
Turn out and serve with custard or lemon sauce.
