Lemon Meringue recipe

|70 g||caster sugar|
|1 tsp||cornstarch or flour|
|1 tsp||vanilla essence|
|3 tsp||lemon rind, grated|
Whisk the egg whites, gradually adding the sugar until stiff peaks form. Add the corn starch and mix well. Stir in the lemon rind and vanilla.
Spoon in a cake tin and bake for about 20 minutes at 160°C or until slightly brown at the top. Let it cool. Divide into four pieces or as desired.
