Baked acorn squash recipe details
Ingredients
2 | acorn squashes |
250 ml | chicken stock |
3 tbsp | unsalted butter |
3 tbsp | brown sugar |
1 tsp | ginger, ground |
¼ tsp | nutmeg, ground |
salt and fresh ground pepper to taste |
Instructions
Cut each squash in half lengthwise. Scrape out the seeds and fibres and discard. Place cut side down in a baking dish. Pour the stock into the dish. Place in a 180°C oven and bake for 20 minutes.Meanwhile, in a small ovenproof bowl, combine the butter, sugar, ginger and nutmeg. Place in the oven to melt the butter and sugar.
Remove the squash from the oven. Turn skin side down and fill each hollow with 1 tablespoon of the butter mixture. Season to taste with salt and pepper.
Butter a piece of parchment paper and use it to cover the dish loosely, buttered side down.
Return to the oven and bake until squash is tender, about 30 minutes. Serve hot.
