Lemon madeira cake recipe details
Ingredients
150 g | unsalted butter, softened |
150 g | caster sugar |
3 large | eggs, beaten |
150 g | self-raising flour |
120 g | plain flour |
1 pinch(es) | salt |
½ large | lemon, zest and juice |
Instructions
Grease and line a 7-inch, 17-18cm cake tin. Preheat oven to Gas Mark 3, 170°C, 325°F.Cream butter and sugar in a bowl until pale. Add the eggs gradually beating well between each addition. If mixture splits, add a little flour. Fold in remaining ingredients.
Spoon mixture into prepared tin and smooth out top. Bake for about an hour until golden brown and springy to the touch. Cool for a few minutes in the tin then turn out onto wire rack to cool completely.
