Lemon escarole soup with chicken and tortellini recipe details
Not a meaty, hearty soup, but rather more of a finesse soup, flavored with lemon, chicken and the curly green escarole. Think of it as a screen pass instead of a fullback draw.

Ingredients
Serves: 4- 2 tablespoons olive oil
- 1/2 pound chicken thighs
- Salt and pepper
- 4 cups chicken broth
- 2 cups tortellini pasta, fresh or frozen
- 2 cups shredded escarole
- 1 1/2 cups frozen peas
- 4 green onions, chopped
- Zest and juice of 1 lemon
- 1/4 cup chopped fresh mint leaves
Preparation method
Prep: 10 mins | Cook: 25 mins1. Heat olive oil in skillet over medium heat. Add chicken to hot oil and sprinkle with salt and pepper. Cook for about 8 minutes, turning to brown, until chicken is no longer pink in the middle. Remove from pan and cool, then shred.
2. Pour chicken broth and 2 cups water into large saucepan. Bring to a low boil over medium heat, then add pasta. Cook according to package directions.
3. Remove saucepan from heat and add chicken and remaining ingredients. Serve.
