Ingredients

  1. Boneless chicken – 1 kg
  2. Salt – 1 ½ tsp
  3. Black pepper powder – ½ tsp
  4. Ginger – 1 tbsp (chopped)
  5. Mushrooms – 6 (medium)
  6. Red capsicum (lal shimla mirch) – 1
  7. Green capsicum ( hari shimla mirch) – 1
  8. Lemon rinds (lemo k chilkay) – of 3 lemon
  9. Spring onion ( hari piyaz) – 5
  10. Olive oil – 4 tbsp
  11. Chicken stock – 5 tsbp
  12. Soya sauce – 2 tbsp
  13. Lemon juice – 3 tbsp
  14. Sugar – 1 tbsp

Instructions

  1. Cut chicken into bite-sized pieces
  2. Put chicken, salt, black pepper, and 1 ½ tbsp oil in a bowl, leave to marinate
  3. Finely slice capsicum, spring onion, lemon rinds and mushrooms
  4. Heat 1 ½ tbsp oil in a large frying pan, add chicken and stir fry for 2minutes
  5. Heat remaining oil in the pot and add ginger, capsicum and mushrooms
  6. Fry for a minute and then add lemon rinds and spring onion, fry some more
  7. Add stock, sugar and soya sauce, when mixture comes to a boil add fried chicken and mix well
  8. Dish out and sprinkle lemon juice before serving
