Lemon Cake recipe

|175 g||sugar, caster or brown|
|1||rind of lemon, finely grated|
Preheat oven to 375 F or Mark 5.
Grease roasting tin (8 x 10 inch). In a bowl mix margarine and sugar together until soft. Beat eggs seperately and then beat into the creamed mixture. Fold in the flour and the grated lemon rind.
Spread mixture evenly in the tin and bake for 30 to 40 minutes.
For the topping, mix caster sugar and lemon juice together and whilst the cake is still hot pour the mixture over the top. Leave to cool.
