Ingredients
1/2 cup (1 stick) unsalted butter at room temperature
1 cup sugar
1 large lemon
2 eggs, beaten
1 Tablespoon lemon extract
1/2 cup milk
1-1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts
1/4 cup confectioners’ sugar
Instructions:

Preheat oven to 350 degrees and grease and flour a 9 x 5-inch loaf pan. Cream sugar and butter together. Grate peel from lemon and add to creamed mixture. Squeeze juice and set aside. Add eggs and lemon extract to sugar mixture. In a separate bowl, combine flour, baking powder, and salt. Add to sugar mixture. Add milk and blend well. Add nuts.

Bake for 55 to 60 minutes. While loaf bakes, combine lemon juice and confectioners’ sugar. When loaf comes out of the oven, pour lemon juice and sugar mixture over loaf while it is still hot. Store loaf wrapped in foil 1 day before slicing.

Makes: 1 loaf
