Lemon Blueberry Muffins recipe

- Ingredients:
- 2 cups flour
- 1 cup sugar
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 1/2 cup oil
- 1 cup half & half
- 1 teaspoon lemon extract
- 2 eggs
- 1 cup blueberries
- zest of 1 lemon
- bit of sugar
Instructions:
Preheat oven to 425 degrees. Line a 12-muffin tin with paper baking cups.
Combine dry ingredients in a bowl. In a larger bowl, combine oil, half & half, lemon extract, and eggs. Stir the dry ingredients into larger bowl until moistened. Mix blueberries with lemon zest and sugar. Fold into batter. Fill cups 3/4 full. Bake 18 to 23 minutes or until golden brown.
