Ingredients

1 l bouillon
¼ tsp saffron
2 tbsp ghee
1  chopped onion
2 clove(s) garlic, crushed
1 tsp curry powder
1  lemon, juice and peel
350 g basmati rice
1 handful cashew nuts, crushed
some coriander leaves
some spring onions, chopped

Instructions

Bring the bouillon to a boil and add the saffron. Let stand for 15 minutes.

In a deep pan heat the ghee, add the onions and garlic, the washed rice and the lemon peel. Fry slightly, then add the bouillon. Add the curry powder, cover the pan and let cook for 15-20 minutes.

Meanwhile fry the cashew nuts in a flat pan.

When the rice is cooked, add the lemon juice, let stand for 5 minutes but do not cook anymore. Sprinkle with cashew nuts, coriander and spring-onions.
