Ingredients
1 | leg of lamb, deboned, trimmed and tied with kitchen string |
oil | |
2 large | tomatoes, diced |
2 large | onions, diced |
4 clove(s) | garlic, chopped |
salt and freshly ground black pepper | |
vegetable stock |
Instructions
Preheat the oven to 220°C. Season the meat generously with salt and pepper and rub with oil. Place into a casserole dish. Fry over medium heat until browned all around, then add the vegetables and season the vegetables slightly with salt and pepper.Place into the oven and reduce the oven temperature to 100°C. Leave in the oven for 4 hours. Occasionally pour over a little vegetable stock.
Cut the leg of lamb in slices and serve with rosemary potatoes and green beans.
