Layered dessert with plums recipe details
Ingredients
500 g | plums, stones removed |
350 ml | plum juice |
30 g | cornflour |
150 ml | orange juice |
¼ tsp | cinnamon |
1 tbsp | sugar |
50 g | sugar |
150 ml | strong coffee, cold |
5 tbsp | port wine |
250 g | almond cookies |
2 medium | eggs |
1 pack(s) | vanilla sugar |
500 g | mascarpone |
500 g | whipped cream |
2 tbsp | cocoa powder |
Instructions
Chop the plums. Mix 6 tablespoons of the plum juice with the cornflour. In a saucepan, heat the remaining plum juice with orange juice, cinnamon and 1 tablespoon of sugar. Whisk in the cornflour mixture and bring to a boil. Cook stirring for 1 minute. Take from the heat and stir in the plums. Leave to cool completely.Mix the wine with the coffee. Arrange the cookies on the bottom of a casserole dish. Drizzle with the coffee mixture. Whisk the cream until stiff. Separate the eggs. Whisk the egg yolks with the remaining sugar and the vanilla sugar until creamy. Fold in the cream and the mascarpone. Whisk the egg whites until stiff and fold the beaten egg white in the cream mixture.
Spread the cookies with half of the cream. Layer the plums over the cream and spread the remaining cream on top. Refrigerate for 90 minutes.
Serve dusted with cocoa powder.
