Ingredients
500 g | peppers, green, red or yellow or a mixture |
500 g | onions |
650 g | tomatoes |
650 g | green apples, crisp, sharp-flavoured |
350 g | soft brown sugar |
1 tsp | allspice, ground |
750 ml | cider vinegar |
1 tsp | peppercorns |
1 tbsp | mustard seed |
Instructions
Seed and chop the peppers. Quarter and skin tomatoes and chop the onions. Peel, core and chop apples.Place in a large pot with sugar, spice and vinegar.
Tie the peppercorns and mustard seed in a piece of muslin.
Tie up with string and anchor end of string to pot handle for easy removal. Place with rest of ingredients.
Bring to the boil and simmer uncovered for about 1 ½ hours until well reduced. Pot and seal.
Sufficient for 2 x 450g jars
