Ingredients

400 g onions
dripping or lard
1 kg neck of lamb, boneless, cut into cubes
some flour, to dust
4  lamb kidneys
1 tsp Worcester sauce
1  bay leaf
2 sprig(s) thyme, or more
salt and pepper
1 kg potatoes, peeled and sliced

Instructions

Sauté the onions in hot lard or dripping until lucent. Dust the meat with flour, then add the meat together with the kidneys to the onions and fry over medium heat for some minutes. Season with Worcester sauce, salt and pepper.

Transfer the lot into a deep casserole dish, add the bay leaf and the thyme. Cut the potatoes in thin slices and layer them overlapping on top. Season with salt and pepper again.

Cover with a lid and place the casserole dish in the cold oven. Heat the oven to 140°C and bake for 2 ˝ – 3 hours. In the last 30 minutes, remove the lid and allow the potatoes to get brown.
