Ingredients
For the cake: | |
6 ounce(s) | butter |
8 ounce(s) | sugar |
3 | eggs, beaten |
8 ounce(s) | self raising flour |
8 fluid ounce(s) | milk |
For the icing: | |
1 tbsp | cocoa |
2 tbsp | hot water |
1 tsp | lemon juice |
8 ounce(s) | icing sugar |
1 tsp | melted butter |
Furthermore: | |
desiccated coconut for coating | |
raspberry jam for sandwiching in the cake |
Instructions
Beat the eggs with butter and sugar to a cream. Add half of the milk and then the sifted flour, and then the rest of the milk. Mix well and pour into a square tin lined with greased proof paper. Bake in a moderate oven for 30 to 40 minutes and set aside to cool.The next day, make the icing by mixing the icing sugar, cocoa, lemon juice, butter and water until smooth. add extra water if too dry, and warm slightly.
Cut the cake into small squares, split them and spread with raspberry jam, then put together. Hold the pieces of cake with a fork and pour the thin icing over them with a spoon and then roll in the coconut to cover.
