Lamb with parsley crust recipe details
Ingredients
1 | rack of lamb, best end |
100 g | butter |
2 bunch(es) | parsley |
Dijon mustard | |
salt and pepper | |
2 tbsp | rosemary, chopped |
1 | onion, chopped |
1 shot(s) | dry red wine |
¼ l | water |
Instructions
Preheat the oven to 200°C.Brush the rack of lamb with 40g butter and sprinkle with salt, pepper and rosemary. Place into a casserole dish and roast for 15 minutes.
Take the casserole dish out of the oven. Brush the roasted rack of lamb with the mustard and turn in the freshly chopped parsley until thick coated. Transfer the meat onto the rack in the oven and roast for another 15 minutes.
In the meantime sauté the onion in the drippings in the casserole dish and deglaze with the red wine and water. Bring to the boil and cook for 5 minutes, then whisk into the sauce 60g ice-cold butter in flakes. Season to taste with salt and pepper.
Carve the meat after a short resting time. Serve with the sauce, together with e.g. green beans and new potatoes.
